We keep "root" veggies in our garage. This worked great until everything froze about a week ago. I've been using frozen onions to cook with. I think I can still use some of the frozen potatoes. But, the frozen winter squash (butternut, acorn, and a couple of others), apples, clementines...is there no hope for them?<br><br>
I brought a butternut into the house, but it turned really mushy as it thawed.

I regularly freeze squash. It does get mushy, but you're cooking it till it is soft anyway. I normally cut up whatever portion of the squash we're not going to use and freeze the pieces, which I then toss into soups or stews.

I froze some zucchini last summer. It does get soft when it defrosts but works just fine in soup.
