Basic tips? I am moving this weekend as we are acquiring (free) shelves that I can use for all sorts of storage including food. I want to keep critters of all sizes out of course but am not sure about any particular steps I should take to keep things safe and organized.

TBH, the garage is not a good place to store food. Not because of the critters as much as the fluctuations of temperature and humidity. I wouldn't keep anything longer than a few days out in the garage and only in glass jars. Also, light affects your food, so if your garage has a lot of windows, that will make a difference as well. Really? My parents always stored dry goods, cans, and bulk items in the garage.
