gestational diabetes recipes?

My good friend just got diagnosed with gestational diabetes. She is an awful eater and worse cook (well she can cook just fine, but doesn't) So, I am thinking maybe I can whip up a couple of things to get her started and maybe some ideas and recipes for her to try on her own. Any ideas, or somewhere to go to get ideas?

If you stick to stuff that has alot of protein, moderate carbs (no white rice, no white bread, etc.... only brown rice, whole wheat pasta, etc.) and very little sugar, it should be fine. Any carbs need to be balanced with a good amount of protein to stabilize the blood sugars.

Off hand, I don't have the exact recipes but if it looks like something you may be interested in, let me know and I'll dig them out.

Here are a few things that might work:

Chicken and Broccoli Casserole (ingredients include 1 whole chicken, cooked and deboned, about a pound of cheddar cheese, cream of mushroom soup, broccoli, brown rice)

Meatloaf (ingredients include ground beef, whole wheat bread crumbs, egg, seasoning such as garlic, salt, peppers etc. to taste, I always puree veggies like green beans, carrots, tomatoes and dump it in as well, cheese is always a good addition too)

Pretty much any protein based meal is good as long as the carbs and simple sugars are kept to a minimum (or at least eaten in moderation). So really you could take any casserole dish or meal and modify it with more protein, healthier or fewer carbs.

As far as sweet treats, there's not a whole lot (aside from fruit which could make her sugars spike) that she can have that doesn't contain artificial sweeteners.
