we have a jersey/holstein for milk. my husband had worked on farms and i went to college for organic agriculture so we sort of just jumped into having a cow...
we've learned a lot by attending Northeast Organic Farming Association conferences where there are workshops of all sorts-- (been to some great home dairy workshops) i don't know if there are any things like that out by you (i'm assuming there are...)
here are some books i've come across:
The Family Cow by Dirk Van Loon (everything you need to know)...
Barnyard in your Backyard by Gail Damerow
Keeping a Family Cow by Joann Grohman
good luck! it's so great to have your own REAL milk!
