Buckwheat Gluten-Free, Dairy-Free Waffles
1.5 cups freshly ground buckwheat flour (I grind it up in a coffee grinder.)
1 cup fruit juice
1 teaspoon apple cider vinegar
Soak above mixture overnight at room temperature.
3 eggs, beaten
1/2 teaspoon salt
1 tablespoon baking powder
1/2 cup shredded coconut
3 tablespoons melted coconut oil
Mix the above ingredients together and stir into the soaked buckwheat mixture. Add more fruit juice until you get a proper batter consistency.
Cook with coconut oil.
I cook these in an old cast iron electric waffle iron. I set it on Medium and cook two ladle-fuls of batter for about 10 minutes. I grease the waffle iron with coconut oil.
Serve with stewed fruit and fried eggs on the side.
