Hi folks. What are some of your common replacements?

Rice flour?
Nut flours?

Which "alternative" is most common in your diet? What alternative flours are the most readily available? Least expensive? Do you make your own flour?

I like amaranth flour, white rice flour and arrowroot powder. I also use buckwheat flour in small quantities, as it lends a less gooey texture it seems. I used to grind my own, but it was tiring and time consuming, so now I just buy it preground and store in fridge. I can't stand nut flours, except for coconut. I use coconut flour in place of dried milk powder, when called for in recipes. The nut flours just turn out gummy in my experience and for me are very hard to digest.

I make almond flour at home. It is actually more like a cornmeal consistency.(From soaked and dried nuts and then process). I am making a blueberry cobbler tomorrow using that.

I guess if I started missing baked goods a lot I would look into rice flour.
