A friend of mine brought me fresh asparagus and I made this with it- it is wonderful! Thought I would share!

Roasted Asparagus over whole wheat penne pasta
1 lb asparagus
1/2 lb penne
Discard hard ends of asparagus and cut the rest into 2 inch sections.
Place in baking dish, cover with olive oil and garlic to taste.
Sprinkle some salt on top. ( I used garlic salt cause I am out of fresh garlic)
Put in 500 degree oven on top rack for about 10-15 mintues

Boil penne to aldente
drain and mix together back in warm pot
Grate parm cheese on top or already grated- whatevr you have.

mmm… That sounds yummy. Asparagus is a favorite of mine and my DS's. He is happy eating it plain after a few minutes of steaming.

I actually just finished preparing a very simple asparagus side dish for our dinner tonight. I just steamed the asparagus for about 5 minutes, and it is now marinating in Italian dressing in the fridge. When it is ready I'll sprinkle with fresh parmesan.
