Is the search function still not working? I know I saw a thread today about green tomato recipes, then my tomato book mysteriously fell onto the kitchen counter, so I came to add some recipes, but can't find the thread. Well. It's a funny book, written by George Washington Carver in 1918 and reprinted in the 80s. "How to Grow the Tomato and 115 Ways to Prepare it for the Table."

There are several green tom. recipes, most involve preserving.
No 102, Tomato Mince Meat, number 3
1 peck green toms. chopped fine
4 lbs brown sugar
1 lb chopped citron (lemon?)
1 lb raisins
1 lb currants
2 c chopped suet (hmm . . . don't know what veg food I would sub for that . . .)
1 t salt
2 t cinnamon
1 t cloves
1 c vinegar

Cover tomatoes with cold water. Scald for 1/2 hr and drain, repeat for a total of 3 times. Mix all ingredients. cook until tender, seal in glass jars.

There are more, but it's late, I'll put up some more tomorrow if there's any interest.
