) Conventional, but yummy: How about as a topping for tacos or burritoes? If it looks pretty, you could even do tostadas! They are bit more work and less nutrious than non-fried burritoes, but they are fun to eat and look nice.
on chips (lol)
spread it on a sandwhich
use it in a wrap
put it on your taco
put it on top of beans/rice
on top of chili
on a salad (like sour cream)
with veggies as a dip (instead of chips - like, celery sticks, etc)
Basically, anywhere you'd think to put either sour cream (ok, maybe not in a potato but who am I to judge?), avacados and/or salsa!
DH made an awesome sort of huevos racheros thing the other day by layering a toasted tortilla, refried black beans, scrambled eggs, guacamole salsa and cheese. It was SO GOOD. Maybe you could try something like that?

While I was out taking my girls to piano lessons, I stopped by the store and grabbed some tort. chips. I was so hungry by this time, then I came home and mixed some corn with black beans and the guacamole salsa, and it was sooo yummy
It was a late lunch, but it sure was yummy
