I've never made a stock out of *just* turkey necks, but I toss them in with turkey carcasses & it turnes out yummy. I have made stock out of just chicken feet before though & it was delish!

I just made stock out of only chicken backs. I haven't tasted it yet, but it looks really good. I roasted them in the oven for about 40 minutes. I also got about two cups of chicken fat out of the roasting pan, which is awesome because I just gave up dairy and can only tolerate small amounts of CO.
