My DH has to be on the train by 6:50 a.m. - so he pretty much runs out of our house every morning by 6:30.

I get up extra early to make him breakfast (he would skip breakfast otherwise
: ) and hand it to him as he's running out the door.


We were doing smoothies for a while and that worked great because he could drink them in the car -- but he seems to have developed an intolerance for dairy and/or soy (we're still trying to figure it out) so needless to say he can barely look at a smoothie w/out feeling ill.

This morning I toasted some bread, slapped on some peanut butter and honey and sent him off with a little sandwich.

What else do you think would be good for a healthy breakfast on the go???

I'm totally open to cooking ahead and freezing - if that helps.

bebe luna ~ I never even thought of hard boiled eggs (and we raise chickens for goodness sake....we have PLENTY of eggs around) -- that's a great idea!
