healthy oatmeal cookie recipe?

Does anyone have a good oatmeal cookie recipe to share with me? I really want cookies, and oatmeal would be somewhat healthy at least. Whole wheat flour ones would be great! (Can I grind oatmeal into oatmeal flour and use that?) An actual recipe or a link would be fantastic...thanks!

I have a supereasy one that is fast and economical.

2 cups oatflakes
1 cup mashed banana
1 cup mashed date
cinnamon to taste
a little vanilla

scoop it all together and press into cookies or bars. Bake at 350 for 10 minutes.
Oooohhh...That sounds good! Thank you! Do they sell dates at a regular grocery store, or only at whole foods? (We don't have any whole food stores around here.)
There should be dates in the baking section in a package similiar to raisins....which BTW you can sub if need be.

the best oatmeal cookie recipe in the world is in cook's 'baking illustrated'. if i paraphrase with my own ing sub, that won't be a copywrite violation, right? i use wh wt pastry flour, which is not at all 'heavy' & can be subbed in all cookie recipes. i wonder that the cook's people have not figured it out; it just tastes better. there's not a person at my dh's work that would guess my cookies are any healthier than any others, lol.

oven, 350'.

parchment paper.

1 1/2 c wh wt pastry flour
1/2 tsp baking powder
1/4 tsp nutmeg
1/2 tsp cinnamon
2 sticks soft butter or butter substitute
1 c l brown sugar
1 c sugar
2 eggs
3 c old-fashioned rolled oats
1 1/2 c golden raisins
1 tsp vanilla
1/2 tsp salt if using unsalted butter

cream butter, sugar, eggs, vanilla- you know the routine. add dry ing except oats & raisins. then add them. 2 T balls 2 inches apart, 22- 25 minutes (in my oven it was 20- don't let them overcook! they will set up.)

I make big, soft cookies with this recipe:

Lighter Oatmeal Cookies

1/2 c brown sugar
2 T butter
1/2 c applesauce
1 lg egg
1 1/2 c flour (could use whole wheat pastry or unbleached)
1 1/2 c oats
1 t baking soda
1 t cinnamon
1/4 t salt
1/2 c raisins
1/2 c chopped walnuts
1 1/2 t vanilla

Preheat oven to 350. Beat sugar and butter at medium speed until well-blended. Add applesauce and egg; beat well. Combine flour, oats, baking soda, cinnamon, salt. Add dry mixture to the wet mixture and stir until well-blended. Add raisins, nuts, and vanilla. Use 3T per cookie and place them 2" apart on a greased baking sheet. Flatten cookies slightly. 10-15 minutes.

Okay, I know it will be dang hard to find whole wheat pastry flour...is unbleached really a lot worse than ww?

I think UB has 75-80% less nutrition than ww flour, at least that's what I've read. But you can buy ww pastry even at krogers (or Ralph's as we call it out here! :p ). It's totally worth it and you'll never notice it!

I can't find Cathe's original post to c/p this so I'll reword the directions. In () is how I have changed it.

Cathe's Applesauce oatmeal cookies

1/3 cup maple syrup
1/4 cup oil (I use coconut oil)
1 egg
1 t. vanilla
1 cup applesauce
1 1/2 cup rolled oats
1 1/2 cup ww (I use ww pastry)
1 t. baking powder
1/2 t. soda
(1/4 t. salt - I thought it needed this)
1 t. cinnamon
1/2 cup chopped walnuts (walnuts)
(I also had 1/2 of *each* raisins and coconut)

350 Oil cookie sheets. Beat oil, egg, vanilla until smooth. Add applesauce and the oats. Mix dry ingredients together; stir in with wet. Add nuts, raisins, and coconut.

Drop by teaspoons onto oiled cookie sheets. Bake 10-12 minutes or until edges and bottoms are golden brown. Cool on wire wracks. Yields 3.5 dozen.

I made Cathe's Oatmeal Applesauce cookies today and they were a big hit in our family. It was the perfect amount of sweetness for us. I added carob chips instead of raisins.
thanks! i will get right on that! (wh wt pastry flour is really easy to find, but it is not at all supermkts, so just try another if it is not at yours. it is MUCH different than just subbing out for reg whole wt.)
