Hi, I know back in my youth, in college, the food co-op would sell a health version of rice krispy treat. I'm sure it had honey and peanut butter.

Anyway, I'm looking for any/every type of variation that's a little healthier....anyone??

TIA

Ive made on that has puffed rice cereal, dried fruit and nuts- marshmallows too though. I got the recipe from the food network show good eats- the episode was called "power trip" - i think. They were quite good. No peanut butter though- that sounds great.

This one is from Neal Barnard and is really yummy. Addictive even!

Crispy Rice Bars

2/3 cup brown rice syrup
1/4 cup natural almond or peanut butter
1/2 tsp vanilla extract
2 cups crisped rice cereal

Additions (choose one):
1/2 cup lightly roasted chopped almonds or walnuts
1/2 cup currants, raisins, or fibely chopped apricots
1/2 cup non-dairy chocolate chips

Line 8-inch-square pan with parchment paper, or mist with cooking spray. Warm/melt brown rice syrup and nut butter in small saucepan til combined and smooth. Remove from heat and stir in vanilla extract. In large bowl, combine cereal and any addition. Pour warm syrup/nut butter mixture over cereal and mix well, quickly and carefully. Pack mixture evenly into pan. Cover and chill until firm.
