...baby sized shorts or pants *without* a seam down the center of the bum.

ideally, i would LOVE to find a pattern kind of like wool shorties stitched in the round, but with seams down the side. i had a pair of shorts for ds when he was tiny that didn't have a seam in the back, just down the sides. but bloomer type of shorts/pants or maybe boxer shorts that have an extra panel in the bum would also work.

any ideas?

This might meet your needs, scroll down to the last project on the page. These pants look cute and have some mix and match fabric potential in how you put it together. It looks easy to draft and sew. I haven't tried it yet but it is on my wish list.

I don't think I have seen a pattern exactly as you describe except for some rag dolls I made for my daughter.
Most patterns have some shaping in the crotch area because of the way people are naturally shaped, KWIM? I'm guessing the ones you used on your newborn worked because they were loose fitting, made of knit fabric, and because, well, they were for a newborn.
