So I went to the store and bought a whole bunch of carrots because they looked good, and then my dad went to Costco and bought even MORE carrots.<br><br>
Any ideas on how we can use up all these carrots before they go bad?

Carrot soup------very easy-----cut up carrots, cut up some sweet yellow onions (cook with oil first) and some potatoes----then add veggie broth (or chicken).<br>
Cook until all is tender. I like to add minced ginger too.<br>
Purree in batches---freezes well.<br>
You can eat as soup or pour over brown rice.<br><br>
Also---carrot bread and muffins---freeze well.<br><br>
Roasted carrots with olive oil and rosemary---add feta on top after it's cooked--heavenly.<br><br>
Carrot and raisin salad.<br><br>
Carrots diced into coins and tossed with olive oil and maple syrup and baked.<br><br>

How about making kimchi? Get some cabbage, ginger, garlic and make a big batch! It keeps FOREVER in the fridge! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile">

Do you have a juicer? The juice is phenomenal (esp if the carrots are very good) - simple or mixed with apple juice.<br>
You can use the pulp, too - for raw cakes.

I shred and freeze. Great for future breads, kimchi and even spaghetti sauce.

Juicing uses tons of carrots.<br><br>
There are also carrot salads..I am making one soon. Cut carots very thin and marinade them in olive oil and favorite spices.<br><br>
My family loves this silly little recipe I call sunshine carrots.<br>
Cooked carrots, cinnimon, honey and earth balance (or butter) salt if you like.

Peel and slice and keep them in the refrigerator for snacks. My children love peeled whole carrots...they pretend they are rabbits. I love having carrot sticks handy all day long, it satisfies me and gives me all kinds of yummy nutrients. Carrot sticks are great for taking to the playground in a cooler, too. Yummy!<br><br>
Add carrots (thinly sliced or shredded) to your salads.<br><br>
Make a stew and add tons of carrots (I love to do this in my crockpot).<br><br>
Make chicken noodle soup with carrots.<br><br>
Go horse back riding or to visit some horses at some stables and take carrots with you to give as treats for the horses. The same applies if you happen to know any rabbits. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">

I make this awesome! soup...<br>
Grate 5-6 carrots, 2-3 garlic cloves (or more, if you love garlic), about a Tb of grated ginger and put in a pot. Add 5-6 cups of veg broth. Simmer for about 45 min, and add a can of coconut nilk. Salt and pepper to taste. So veryvery good.<img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/thumb.gif" style="border:0px solid;" title="thumbs up">

Carrot Curry<br><br>
Saute a medium chopped onion and 1 chopped (and seeded) jalapeno chile in a little olive oil (about 2 tablespoons oil).<br><br>
Add about 1 lb of carrots, sliced into 1/4 inch pieces. Saute for about 3 minutes.<br><br>
Add 1 teaspoon ground coriander, 1 teaspoon cumin, 1/2 teaspoon ground fennel, 1/2 teaspoon turmeric, dash of cayenne pepper, salt.<br><br>
Add 3/4 cup coconut milk, lower heat and let simmer for about 30 minutes till carrots are tender.<br><br>
Serve with rice.<br><br>
