So DD is still having this rash down her legs that I thought was yeast (she is prone to yeast) and never really gets better, but fades and gets worse, fades and gets worse...so now I'm wondering if it's excema? my kinesiologist went thru a ton of foods that I thought could be causing it (coconut, CORN, apples, bananas, just things we eat alot of...)and she was negative to everything but...EGGS! I think I am in mourning! We eat eggs ALL THE TIME! And I have do idea how to eat egg free, esp for breakfast...I would've cried on the spot except that DD was there with me! We've been off eggs for 6 days now and I really could use some help with breakfast and baking! I feel like I'd finally found my niche and comfort zone with our food and now I've got to work it all out again--I'm sure you can relate!
I need to be able to make muffins and pancakes and brownies, please! And any breakfast help--we're huge fans of quiche, and just eggs in general...on a positive note, we've ordered the complete gluten panel for dd and it came today. Can someone just come on here and tell me I can bake without eggs, please?

Here's the egg replacer that I use for baking (and even in meatloaf)...

1/4 cup water + 1 T ground flaxseed = 1 egg
Take 1/4 cup boiling water and slowly add 1 heaping tablespoon of ground flaxseed, mixing thoroughly with a small whisk or fork. Let it sit for a couple of minutes and it will get goopy like an egg. It works best in recipes that do not heavily rely on eggs. It doesn't bind quite as well as an egg, but it'll do in most cases.

You can definitely bake without eggs, but it seems to require some practice. We've been using the EnerG egg replacer stuff you get at the Coop or Whole Foods, etc. I've used it in baking mixes a few times, and it seems to work well, but honestly we're egg-free too and I think in all likelyhood you'll end up reducing your muffin-pancake-baked good load unless you bake a lot at home and don't eat these things out and about.

Some pancake and muffin recipes work fine without egg. We are egg free and honestly we have cut way back on baked goods and I do not miss them anymore.

Oatmeal and red lentil soup are some of DS's favorite breakfeasts now. Smoothies are something alse you can pack with protein and other good things that are easy to hide.

Change your thinking. Don't try to make the exact same thing but without eggs (quiche will never work).
Smoothies
waffles and pancakes work with the flax-egg
I've done a couple of muffins (carrot cake was one)
hot buckwheat cereal
cream of rice
cold cereal (we do rice chex, Crispy Rice Cereal, Koala Crisps)
"fig newtons" (fruit filled bar, I'm thinking of other fruits to do with it)
fresh fruit
Canadian bacon
sausage
bacon
sweet potato-bacon hash

Thanks, everyone. My net was down and I couldn't get on yesterday...

Okay, right, I can't do quiche. We also don't eat pork--and I can't get turkey sausage/bacon that DD doesn't react to locally (we're small town). My VitaMix will be here next week, so smoothies is on the list, as well as cream of rice cereal. We try to eat to DD's spec, but I'm finding that I can't...my blood sugar really dips and I'm thinking DD's does too...I know I need to fiigure out some non breakfast foods that my family would eat for breakfast...
Oh, any tricks on nonstick castiron? I've never had an issue with pancakes sticking til I've made them without eggs...any tips there?
Also, any good ideas how to boost protein in the smoothies, non-synthetically? DD2 can't do nuts, and I'd love to figure one out that we could all do...you guys are awesome! Thanks for the suggestions so far!

For baking cookies and things, I've always used plain gelatin in place of eggs. One little packet usually can make two "eggs". I don't have an exact science, I just pour it into a little cup, add some lukewarm water until it looks like it's taking up the space of two eggs and then wait until it gels up to the consistency of an egg.
I had a friend who was able to eat chocolate chip cookies for the first time in 8 years because of the substitution (she was highly allergic to eggs) and she actually cried...

Anyway, I'm pretty sure the plain gelatin (which you should be able to find in the baking aisle at any supermarket) would work in any baking.

Thnks, MTH. I'll have to try that as I have found a mix for choc chip cookies that we all like and I wasn't sure waht to do about the eggs...(wasn't sure flax would be all that great in cookies...)

The egg replacer I use for cookies is: 1 T. white vinegar, 1 T. water, and 1/2 t. baking powder per egg mixed together and beaten in. It works fairly well in recipes that use only 1 or 2 eggs. I started doing this when I was PG with DS so that I could eat the cookie dough ... I do it now because DS has an anaphylactic reaction to egg. I honestly can't tell the difference between egg cookies and the replacer cookies.

Go to allrecipes.com and look for egg-free cookies and cakes. They have quite a few recipes. We use their shortbread cookie press cookie recipe. I also use an egg-free banana bread recipe I found there (it's supposed to be dairy-free too but most people add 1/2 cup milk to the recipe).

Wacky cake is egg-free (uses vinegar and soda to leaven it). And delicious!! It's our go-to chocolate cake.


I have an egg-free muffin recipe which works well for blueberry muffins -- I'm in an Easter rush here, so PM me to remind me to send it to you (and the other recipes if you're interested in them). I probably won't be online again for any length of time 'til next week, sorry!

Our breakfasts are more oatmeal, cold cereal, safe breads, etc. If you're not dairy-free, you're set for proteins. Just throw in yogurt or etc.

Thanks, gals. I think I may just survive this...this morning we had shredded roast beef with hash browns and muffins. I seriously cannot WAIT til my Vitamix gets here!
: Then it'll so much easier. Yeah, we are GF/CF citrus, oats and egg free. I need to make some coconut milk yogurt....
