I have several pounds of really nice waxy potatoes that I got at the farmer's market and need to use this week. My mom's here, so that means no curry, Thai, Indian or super spicy stuff. Cheese, milk and eggs are ok, but low fat is better. Thanks!!!
potato salad! you can use an oil and vinegar dressing if you're anti-mayo. roasting is always good, too. my kids usually love oven roasted home fries.

How do you oven roast your potatoes? I've tried a few times, and the results haven't been so good.
cut the potatoes in 1/2-2 inch cubes (skin on), toss in olive oil, celtic sea salt and rosemary, roast in oven (about 400f for 20-25 minutes or until crisp outside and tender inside). mmmm!
make mashed potatoes--make a lot--use the leftovers in veggie burgers the next day.
Make a fritatta. Shredded potatoes and onions fried until golden then pour a few scrambles eggs over the top. Salt & pepper. Put the pan in the oven for 15-20 minutes until the eggs are set. Top with some cheese and return to the oven for five minutes.

I was just going to say that! You can toss in other root veggies--carrots, sweet potatoes, etc . . . some green peppers. Delicious!!!
about 10 med/lg potatoes. Peel and grate on smallest grate-edge(don't use the food processor unless it has a small grater attachment-- you'll be dissapointed). Grate a medium sized onion the same way. mix. if you do eggs ad a few (2-3) if not so be it. try to get a bit of the water out by pressing the guck slightly, some can stay in. add a few table spoons of flour and mix. pre-heat skillet or pan with desired oil and drop pancake-sized amounts into the pan. reduce heat by a little (like if you preheat on 6.5 reduce to 5). flip when golden on one side.
most people like them with apple sauce but I like them with pure maple syrup.
The grating sucks, true, but it's well worth the taste. Could you enlist a helper to do the grating for you?
Also, get the whole buisness done quickly, for as you know potatoes don't like to wait uncooked.
Chop up the potatoes into little cubes. Put them in a bowl and drizzle with olive oil, salt, and lemon pepper. Mix them around so all the potatoes are coated. Scoop the potatoes into a glass oven dish and bake for about half an hour at 400.
