Ok....dishes Im making lately are starting to get old....need some new recipes...mostly toddler friendly....and ones that are fast and easy. I have all kinds of stuff going on each day and not much time. Need some yummy new tofu dishes! I like to marinate the tofu in a 50/50 mixture of apple cider vinegar and soy sauce. I put lots (a tablespoon or more) of fresh grated ginger in there and usually press a couple of garlic cloves into the marinade too. Let it soak for a while, and then cut and pan fry, saute with some oil (and a little marinade too for extra flavor), bake it, or grill it. We put tofu slabs (big block cut into four slices) marinated like this on the grill the other night, and they were delicious. You can brush with extra marinade while it's grilling or pan-frying.
