My son is allergic to wheat and sugar. My husband has a family tradition of eating Monkey Bread on Christmas morning. I am used to making this with refrigerator biscuits and sugar. Ideas for an easy dough with spelt flour that would be like the store bought biscuits. And I usually use agave syrup for him, but in this recipe I think something more like sugar would be better. How about Maple sugar?

Thanks in advance! I need to try this out ASAP so I know if it works...

maple sugar sounds good in this case.
Is it only wheat, or all gluten? If it's only wheat then maybe a rye or barley would work best as a direct sub in a biscuit recipe. If it's all gluten, then it gets a little trickier. Can you use guar gum or xanthan gum? If so, you should probably be able to find a gluten-free biscuit recipe that will work.

Our family always had an apricot coffee cake for Christmas breakfast (passed down from DH's family) but this year with 3 out of the 5 of us being dairy, gluten, soy, and others free, who knows what breakfast will be!

Not sure. We're gluten free here, so we don't do any of the alternate flours (well, I use rye in DH's english muffins sometimes). You could always try to make a biscuit with the spelt and see how it goes. Then add the other things.

You do know that spelt is wheat, don't you? If he can't have wheat he shouldn't have spelt either. I myself already made that mistake...
