I need to make it 12 more days on what I have in my pantry. I've already made plans for everything but 3 meals, and this list is what I have left... I have no idea how I'm going to pull 3 meals out of it.

Meatballs (huge bag)
1/2 pkg bacon

Beans & Other Dry Items
Brown Rice
White Long Grain Rice
French Onion Soup Mix (3 or so)
TONS of beans (northern, kidney, spilt pea, pinto...etc)

Canned Goods
Greek Black Olives
1 tiny can sliced black olives
2 Cans sliced potatoes
1 can tomato paste
1 can creamed corn
1 Can sauerkraut

Fresh
I think you can make it. The meals may not be totally nutritionally balanced, but hey, it's not forever, just a few meals.

One meal suggestion:

French onion soup with some meatballs

OR

You could make a kind of corn chowder with the creamed corn, French onion soup, milk. Add some meatballs if that sounds good.

Another:

Make rice, make a sauce out of the tomato paste, water, meatballs, maybe a can of the potatoes, some sauteed celery. Top with cheese.

Another:

a bean soup with some bacon. Top with cheese, if you like.

A classic (and I'm guessing you already have this, but hey!):

Beans and rice. Add some bacon or meatballs for an extra Oomph! Or top with some cheese and make it a mexican style dinner.

Okay, that's all I got!

Good luck!

Sounds like you are doing good so far.

I might do

a bean soup with the french onion soup mix as a base, potatoes for extra bulk and some bacon for flavor. You could also make biscuits on the side if you have any butter or shortening.

meatballs with rice, and maybe the corn on the side.

Pizza (do you have any yeast? usually it is under $2.00 for three packets) with tomato, cheese, and olives.

1. Fry sauerkraut and potatoes in bacon fat, crumble in bacon

2. Meatballs and creamed corn

3. could make some kinda rice with crumbled meatballs, a little tomato paste mixed with sugar, add olives, pinto beans, mexican type spices - cumin, red pepper, black pepper, chilli powder, salt, onion and garlic powder. Top with lots of cheese. Don't over do the tomato paste - start low, go slow. Would dilute tom. paste with water a little first

You could make a simple drop biscuit recipe (http://allrecipes.com/Recipe/E-Z-Dro...ts/Detail.aspx - these are really good) and cook up some eggs and bacon for breakfast biscuit sandwiches.

If you go to allrecipes.com, they have an ingredient search. Put in a few ingredients and it will show you what you can make. I found a tasty looking recipe for rice soup: http://allrecipes.com/Recipe/Simply-...up/Detail.aspx

Good luck!

Meatballs and gravey with mashed potatoes (mash up the taters from the cans with a little boullion for extra flavor...cheaper than milk).

Waffles and scrambled eggs.

rice and beans

bean soup (use the bacon and bacon grease as a base, with perhaps the french onion for extra flavor) with homemade sour dough bread or drop biscuits.

Meatball sandwiches with leftover meatballs and bread
