Beans and rice some of the most affordable foods and everyone in the family enjoys them except dd.

Are there ways to use rice and beans that change the texture? The texture is what dd has a problem with.

Make bean burgers or bean fritters from the beans and rice?

I second the idea of bean burgers, then give something to dip 'em in.

You can puree beans (and rice, too, I'd imagine) and put them in soups. I think Jessica Seinfeld has a chili recipe that purees the beans, and you can also make a creamy bean soup. Add whatever veggies, potatoes, etc.

Also, dips made with beans -- hummus, white bean dip with garlic, lemon and parsley, tex-mex spiced black beans, even ranch dip with white beans or garbanzos.

If you toast/roast garbanzos (toss with a little OO and spices first) they get crunchy, so that might be a nice snack.

Maybe if you hid them in burritos or quesadillas and put lots of cheese on (or whatever other toppings you think would fly)?

HTH! I wish I could get my DS to eat beans, too.
