Hello there! Are there any other home canners out there? I canned all by myself for the first time. The pressure cooker was scarey for me
. Anyway, the book I had said not to tighten the lids too tight or too loose... well, that helps me a lot. I tightend most of them too loose and some of the water in the jars (I was canning carrots) came out. On some a little, on others almost half. What I'm tryin' to get at is... even though water came out, they still sealed.. Will they still keep?

What I do is tighten them as much as I can, then loosen 1/4 turn. That seems to work pretty well.

Yours will keep just fine as long as they are sealed, but it's possible the texture of the carrots that are above the water might be a bit off. Honestly, I don't know - but they will be safe, don't worry!
