I was planning on making cornbread but then I looked at the recipe and it has flour in it!!! I'm so mad. Does anyone know how to make it without gluten where it actually tastes good?

I made brazilian cheese bread today....quite delish and super simple....

any other good bread-type things I can bake at home without gluten?

you got me, mama... I'm still working on that. unlike you, I HATE baking. I'm a cooking kinda girl. give me a cast iron skillet and I can cook for hours. but the complexities of flours and wet mixes make my head spin. if I never had to bake a thing I'd be more than content.

I usually buy a GF cornbread mix if we have a special dinner or whatever. I'm just starting to experiment with GF flours and what not.

You should be able to find a cornbread recipe that is gf pretty easy- I was thinking there was one of the back of the bag usually- I am out right now- but usually get Hogdon (sp) Mill and make it gf fairly frequently.

For any kind of bready/baked thing that doesn't need the gluteny-glue, you can generally sub about any flour. GF baking can be an adventure, but you might as well just jump in. I understand your hesitation... I felt it, too... and the alternative flours can be so expensive and so hard to find... possibly messing up stinks with such special ingredients. I think that's why I haven't tried sourdough yet... that adds in time and effort, too.

But,yeah... it's hard to screw up cornbread. Give it a try!

We've been gf for a few months now, and we LOVE all the mixes from Pamela's Products (all gluten free). You can get the bread mix from Amazon using the subscribe option (this saves the 15% off their price). You can either use a breadmaker or make the bread in the oven.

Other bread type foods we've made without gluten:
tortillas (get the Maseca mix (corn))
arepas (corn)
injera (teff)
gf chapatis (my dh mixed up a bunch of diff flours, if you're interested I can ask him what)
