home-made velveeta?

I have a recipe calling for velveeta. I don't have it. What can I use it its place. I have cheese and would guess I just need to add milk?

I haven't eaten velveeta since I was a little kid. However, I would think that any mild cheese would work -- maybe a jack cheese. Or "american" cheese. Gee I haven't eaten that in years, either...
We always just substitute cheddar. Any cheese will work (and will probably taste a lot better and be better for you too
).

Depending on the recipe, it might work better to make a white sauce with cheese in it.
