Simple question:<br><br>
Are you supposed to put the honey pot 'stick' into the water, of say, a hot cup of tea? or, rather just let the honey drip off the stick into your tea? Is the water on the stick bad for the honey in the jar, or is it best to keep it dry? Dunno... Thanks Ladies! Let it drip. Putting the stick into your tea cup can contaminate it with bacteria. Putting it then back into the honey pot you're introducing bacteria. Since most people don't refrigerate their honey, and keep it more than a few days, introducing more bacteria (than what is there naturally) is usually a good thing to avoid.

Honey is *extremely* antibacterial. I would not worry about contaminating it with bacteria from the tea. I would worry about contaminating the flavor of the honey. More importantly, though, over time as you add a few drops of water here and a few there, you're going to water down the honey. When you water it down to a certain point, it's antimicrobial properties diminish. Granted the tea water you're dipping in is boiling, so you're not going likely to actually introduce dangerous bacteria. But, natural yeasts airborne in your kitchen will invade your honeypot and your honey will turn to mead. Now, that's not necessarily a bad thing <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/wink1.gif" style="border:0px solid;" title="wink1"> but probably not what you're aiming for.
