I just made a batch of turkey stock (it looks great even though I forgot to skim the scum -
and I have about 3 liters cooling in my fridge. I hope it gels up!

But now I'm wondering how to use it well. I live alone, and either cook for myself or for me and my BF. So tell me, how do you use your stock? I know about using stock to make rice, but I'm staying away from grains at the moment. Please, any and all ideas are welcome. I have a feeling I can use it in a lot of things that I would never even think of, so lay it on me! TIA!

Most of mine goes in soups and stews because they are a lot of our winter diet! You could reduce it right down and use it where ever you would use a stock cube - like to add flavour to meat etc. Any sauces and gravys tend to be stock based.

If you think you might have trouble using it all up quickly then I would freeze it in portions. I use a deep silicon muffin tray to freeze one cup portions that I pop out into a bag when they are fully frozen.

That's a really great idea! I am going to have to start doing that.

Soup and rice and sometimes just as a warm drink. Just made this super yummy soup yesterday with some of the turkey stock. I sauted a leek in some butter, added the rest of our leftover turkey cut up(about 1.5 cups, but you could add more), 2 med. yukon gold potatoes diced, a small bunch of kale chopped up, 3 fresh thyme sprigs and salt and pepper to taste. I added turkey stock to fill up the pot and cooked it all on medium heat for about 30 minutes.
OMG, so so so good.

Your situation is me exactly- single and no kids, but sometimes cook for my fiance.

You can make a chicken or turkey soup with meat pieces, celery, and carrots.

I also use broth as a base for a lot of sauces that I put on meats or put in the crock pot with meats.

I use it instead of milk when I make mashed potatoes.

That sounds delicious! What a great idea...I wonder if I made mashed sweet potatoes and butternut squash, with stock in place of milk...

Lately I've been using it to make a quick soup for lunch... heat up the stock, toss in some chopped vegetables, toss in some leftover cut up meat at the last minute. During cold and flu season I throw in a hefty amount of garlic with the vegetables.
