I started the elimination diet (TED) in March and it took about 4 wks for the excema and reflux to completely disappear, although I noticed a change within 10 days. It has not returned, except slightly during an unsuccessful trial. I suggest going on the full TED, as described by Dr Sears for at least 4 wks if you can. It is the only way (IMO) to really get to "baseline" before you start adding food back in. You can get lots of fat and protein from the chicken/turkey - use fattier thigh meat instead of breast and cook in lots of olive oil. I also put olive oil on my rice with sea salt - very yummy! It was/is hard, but SO WORTH IT to feel my 12 mth old's smooth skin and not see spit up all over her everyday. We are still figuring out which foods are the triggers for her and I have added in various fruit, veggies, and other meats successfully. I recommend a log when you start trialing foods to watch for reactions. Good luck!
