I make kefir about once a week, because it takes us a week to use 2 quarts, which is the quantity I make. It always smells and looks the same from start to finish, but do the probiotics last the full week in the fridge?
Should I monkey around with making less more often?

Mine lasts a long time. I usually drink it, but from time to time I find a forgotten jar in the back of the refrigerator -- I've never had it go bad. I think I've had it up to a month or six weeks.
