OK so I'm totally programmed to prepare large quantities when making meals and well I don't need to and now we're wasting food! I never realized that my meal plan would be so affected with H gone. I guess H ate more than I realized between what he ate at home and what he took to work.
I have a few things working against me:
1) I can't make large batches & freeze since I have a tiny fridge/ freezer unit (I swear the thing is apartment size even though I'm renting a house!) & I haven't yet purchased a separate freezer (not in budget right now).
2) Most of my recipes seem to be for large batches.
3) I'm still buying groceries as I did for years which is SUPER wasteful!!! I just can't seem to get the lower quantities right.
4) I have lost all motivation and creativity in the kitchen since the separation.

ADVICE and SUGGESTIONS welcome!

I would suggest making the extras into lunch. That is what I do. I throw away very little.

I have seen some REALLY little (seperate unit) freezers- at Sears. I understand you don't have the $ for one now, but some are (new) under $200 and nice and small... like they would not be so hard to move, you know? If you have any way to pick one up I would suggest looking on Freecycle. We let a small chect one go a few years back when we got a bigger one, it was only 5 years old... So if you have transportation for it, check freecycle, Because this is idea... serve your family dinner, then freeze all the rest, label and then that is one whole night you do nto even have to cook for, it's great!

How about things like homemade burgers or tacos or something that taste good for both ages and can be eaten in one day or two?

I also make lots of homemade pizzas and everyone gets their favorite toppings. I put them on thin whole wheat tortilla shells, homemade sauce (with extra veggies chopped finely) and their favorite toppings. The pizza sauce can be made in larger quantities and frozen in small plastic bags to use whenever. It takes less than 15 minutes.

I also make a fun thing that uses a medley of beans mixed with stewed tomatos and salsa, I mix it all together, put it on top of some multi-grain taco chips and add cheese. The kids love it and again, quick and easy to make.

I can't speak to a H eating for more than one but I really relate to this:

I love to cook. I even went to culinary school. Now it's frozen meals for me. It's hard not having that person to cook for.

No advice, I can just relate.
