i went to a farmers market today in the hopes of finding some raw milk as we are in the city at the moment. i found the raw buffalo milk! does anyone know if this is as good as cows milk better or worse? it is more expensive than the cows milk though. i want to make kefir with it. is it ok to use my grains that have previously been in cows milk?

i didn't either! but this farm has them and is making cheeses, yogurts and the milk (no butter though <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/greensad.gif" style="border:0px solid;" title="greensad">). they also had some buffalo meat cuts. i think there are a few farms in england doing buffalo, but i don't think it is traditional to england!<br><br>
i also know somewhere that i can get raw goats milk but it is far away and has to be courier delivered so it is really expensive - out of my budget. but if the buffalo's good i'll go back for some more.

I think it's fine to change what kinds of milk you use for your kefir grains...at least I've done it! lol<br>
Let us know how it tastes. Does the cream separate in Buffalo's milk?

There's a water buffalo herd near here - they use the milk to make the most delicious fresh mozzarella. Unfortunately they can't sell it raw though <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/greensad.gif" style="border:0px solid;" title="greensad"> Stupid Health Canada. The cheese tastes lovely though. My DD loves it - although at nearly $10 for a 250g chunk, she doesn't get it very often <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">

Make some yogurt and enjoy it for me. When I could have dairy, buffalo yogurt was my dessert. I just couldn't afford it too often.

snowcrocus thanks for posting that link it is really interesting. i've put my kefir grains in the milk and so i'll see how it comes out. it is very white and looks quite rich and creamy so i'm looking forward to trying it. i'll post about how it turns out. thanks.

Buffalo is kosher as per Biblical and Torah law. So are camels.<br><br>

I think buffalo milk has higher fat, so your kefir should be deliciously creamy! <img alt="" class="inlineimg" src="/img/vbsmilies/smilies/eat.gif" style="border:0px solid;" title="Eat">: I don't know how you resisted tasting the milk before putting your grains in it. I am enjoying my first glass of raw milk in almost 2 weeks and can't imagine having raw milk on hand, especially from an animal that is slightly exotic, and not just chugging it! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/lol.gif" style="border:0px solid;" title="lol">

I would just double check what they are feeding them. I saw a restaurant advertising bison meat recently and thought that was really neat - until we drove a few miles down the road and saw all the buffalo fenced in on less than an acre of land. They obviously weren't grass-fed! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/greensad.gif" style="border:0px solid;" title="greensad"><br><br>

camels actually have toes, not hooves. they're also in one of the lists of animals explicitly said to be "unclean" (ie not kosher).<br><br>
i always thought it was kind of a bummer for the ancient israelites to be avoiding the meat of an animal that was so useful and abundant in their part of the world. but from an archaeological perspective it's kind of nifty because you can dig up in the remains of old altars the bones of the animals sacrificed there, and you see even in the times before the bible was written down that there are certain ones that only contain remains of sheep and goats and occasionally deer.

so i made kefir with the buffalo milk. i actually don't like any kind of milk so i didn't even try it as it was!! the kefir was so thick and creamy it was really nice it went like greek yogurt! the milk itself is extremely creamy, very rich and very white, if i was a milk drinker it would probably be amazing, but i also drink the kefir blended up with honey and fruit!! so i didn't get the natural taste - sorry i know!! the really great thing was that it was so filling and i actually had it for lunch!
