I just made a really yummy, somewhat healthy meal from scratch! I do NOT cook, so this is a HUGE thing for me!

DH usually does most of the cooking around here, but last night he was sick so it was up to me to come up with something somewhat nutritious for dinner with ingredients I had on hand... ground beef, broccoli and brown rice. I cooked the rice, browned the meat and threw them into a casserole dish with the broccoli (still frozen) on top and stuck it in the oven for about 15 min. Then I put some cheese on top and put it back in to let the cheese melt. Dinner was not so great - it was way too dry and didn't have much flavor. Doh! So I saved the leftovers and for lunch I put it in a pot with a splash of heavy cream and a bit more cheese, let it come to a boil and voila! It was delicious! Sort of like a meaty broccoli-cheese soup. Yum!


Anyone else have a spur-of-the-moment recipe that turned out great?

Ooh what a good idea! Now that's something DH probably would've thought of, but since he was sick in bed it was left up to me LOL. So my boys got what they got. Funny thing, DS wasn't that into it last night (no surprise) but even when I doctored it up today he wouldn't even touch it! Just gave me a dirty look when I tried to feed him a bite.
