and I need to use them quickly before they go bad.<br>
Does anyone have any recipes?<br>
Can I freeze lemons?<br><br>

i don't know about freezing whole lemons, but you could juice some and pour the juice into ice cube trays and freeze them and later bag them for a couple tablespoon serving at a time. you could probably freeze lemon zest too <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> yum yum

Ditto that on the freezing the juice. I do that.<br><br>
But for sure, use some fresh ones for chicken piccata! <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/yummy.gif" style="border:0px solid;" title="yummy">

Freeze the juice and freeze the zest. You can zest them and then put the zest into ice cube trays, pack as much as you can and then top up with juice and freeze then remove and put into a baggie. Then when you need zest just pop in a cube of zest. I freeze the juice the same way because most recipies will call for a couple of tbsp.<br><br>
You could also make lemon merangue (sp?) pie. I made a great one. It does have sugar in the lemon custard but I made a whole spelt crust that was great.

I think the easiest and quickest thing would be to juice them and freeze the juice. That way, DH can help. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/mischievous.gif" style="border:0px solid;" title="mischief">

Seriously though...you could make lemon meringue, lemon cake, lemon mousse, lemon muffins, lemon cookies, lemon soup. Lemonade is always good. If you have a juicer it's super easy...peel the zest off with a vegetable peeler or sharp paring knife and the run the whole thing through the juicer...or juice by hand...boil water, add sugar and zest (equal parts sugar and water) to make simple syrup...add lemon juice, cold water and simple syrup until it taste right! Add fresh mint to the bottom of a tall glass, add crushed ice and lemonade...delicious!
