Rinsing the beans'll sort 'em for you, the wonky ones tend to float. Also kind of run your fingers through them all, and check out any that feel different enough to notice.

If you plan in advance you can soak the beans for about 8 hours. Otherwise, bring them to a boil for about 2 minutes, then turn the heat to a simmer and cover and cook for 1 hour. At that point the beans are rehydrated and ready to be used like canned beans.
