What kind of a casserole? Did you check allrecipes.com? I know there are a bunch of casserole recipes there, and also some good broccoli salad recipes. You could also consider broccoli-cheese soup (which freezes well) and broccoli quiche or fritatta (which also freezes well).

I'm subbing. I had a broccoli casserole that I loved, but can't find the recipe. Basically, broccoli, chicken, rice, and cheese. Wow, I'm getting hungry for it now, maybe I'll make something tomorrow if I get a recipe!

my mom made one when i was a kid that was basically penne cheese sauce and broccoli.bake until crispy

i make a vegan variation but use nutritional yeast for the sauce instead of cheese.

The Enchanted Brocolli Forest has been on my wish list FOREVER. Might have to actually buy it one day soon...

Anyway, I'm thinking brocolli, rice, cheese- just not sure how to bind it. Ideas? Maybe an egg or two?

do you have the original moosewood cookbook?
we love the cauliflower cheese pie in there. We don't make the crust from scratch though. We cheat and use a premade crust. I think the one in the cookbook is made from something like shredded potatoes or something!

Anways, it's good, my kids eat it, and I'm sure you could sub broc instead of cauli.

I sautee so it's cooked but not soggy. Make a cheese sauce (cheese and milk heated up on stove). Put broccoli and cheese sauce in a baking dish, and bake for maybe 30 min. I have a recipe but don't have it in front of me, so this is from memory.

Broccoli Corn Casserole
(From my mom- not perfectly healthy, but very tasty!)

1 can cream style corn
2 eggs, beaten
(Next, the recipe calls for a can of cheddar cheese soup, but instead I prefer

3/4 cup cheddar cheese, grated &
1/2 milk (I use rice milk)

Mix all that stuff together. Then stir in:

1 med. head broccoli, cut up rather smallish
1 small onion, minced
1/2 cup cracker crumbs or dry bread crumbs
salt & pepper to taste

Pour into an oiled casserole dish, approx. 8" x 8" should work. Top with some buttered cracker or bread crumbs. Bake at 350 for 45 minutes or so. Dig in.
