we regularly make the ice cream(s) in the NT cookbook and have been really happy with them. but when the ice cream is frozen it turns out REALLY hard... what do you store your ice cream in, and does it keep it super hard? any way to make it softer?

Yep, mine goes rock hard too. I kind of accept that that's a sign of it being natural and point out to DH that if it had all the chemicals in it that commercial icecreams have then it would also be soft.

That said, I have made a couple of batches which stayed softer than normal. They were made with a couple of teaspoons of vanilla essence that was vodka based.

my first few batches came out rock hard too, now i add a tablespoon of vodka to each batch and it comes out softer.
