If it were absolutely impossible for you to get to the store for a full week, and you had one last chance to go and stock up, and it HAD to last all week what would you make sure you had plenty of?

..okay, i know some people regularly go a week or more without shopping, but we're not nearly that good at planning! It'll just be myself and a toddler, so any cooking is going to be super quick/simple. What would be on YOUR list?

I'd probably plan some meals for the crock pot, then you could save some of the meal for lunch the next day or maybe even dinner again the next night.

I'd probably make sure I had beans, veggies, wraps, brown rice pasta, RICE! Lol, those are my staples really anyway.

Thanks! Really helps to trigger some more ideas. I added a few more things to my list. It's so hard for me to think in advance what I need/want from the store unless there's something very specific I want to make. Most things don't occur to me until I walk past them in the store.

brown rice (depending on what you eat and can afford)
Jar of nut butter
Whole grain bread

At least 6 eggs
Couple cans of tuna (if you eat it)
2 cans black beans
5 lbs carrots
1 lb of whole wheat (or GF) pasta
1 or two cans crushed tomatoes
1 lb greens (chard, spinach, collards, bok choy etc-- this is a lot of greens-- should last a couple of meals)

A week's shopping for me usually includes at least 1 lb of ground meat, a whole chicken, and one more piece of meat (whatever's on sale usually, this week was London Broil).

At least 5 pieces of seasonal fruit (these go in DH's lunch)
baby carrots (lunch)
mushrooms
potatoes
onions
string cheese (lunch)
1-2 dozen eggs
a green of some sort (lettuce, cabbage, broccoli rabe, etc.)
at least 2 other veggies, whatever is in season and looks fresh
milk
butter
cheese
tortillas

We don't eat them usually, but you may also want to include:
beans
rice
bread
oatmeal

It might be helpful to just sit down and make a theoretical menu for the week. i'm not great at doing this on a regular basis, but we have 2 deep freezers in our basement so i never have to worry about meat and i always keep lots of frozen veggies on hand so we can always have a veggie even if nothing fresh at the store looks good.

it's helpful to think in terms of meals vs. individual items, then make sure you have what you need for cooking them.

so quick and easy breakfasts for us would include yogurt with granola, fried eggs on a toasted bagel, scrambled eggs with cheese, oatmeal, zucchini bread, banana bread (the breads having been made the day before), kefir-based smoothies with fresh or frozen fruit and juice.

quick lunches might include: nut butter/jelly sandwiches, soup, salad, egg salad sandwiches, tuna salad sandwiches, grilled cheese sandwiches, annie's mac and cheese.

in your situation i'd be inclined to make a big batch of pasta sauce ahead of time so all i had to do was boil some noodles and throw together a salad for a couple of dinners. also maybe a bit batch of chili or soup so it could just be quickly heated up and either eaten alone or with some crackers or bread or salad. i always keep some containers of organic fire roasted pepper and tomato soup from Costco in the cupboard, so if i'm in need of something super quick and easy for dinner it might be that soup and grilled cheese sandwiches.

and you might be feeling cooped up and have the desire to get out of the house, so if budget permits, you might plan on taking the LO out to eat someplace for dinner one night for a change of scenery.

I'd make sure I had enough onions, garlic, other veggies & fruit to... but thats basicly all I buy at the grocery store these days anyways (beans/grains/oils/pb come from my co-op in bulk, milk from my herd share and cheese from my local cheese place, most of the other random stuff also comes from my co-op... and we hunt/raise or buy locally the meat that we do eat)

I usually shop for two weeks at a time.

For 1 week I would plan 7 dinners.
If it were just myself and dd-
1. chicken strips, mashed potatoes, fruit
2. spaghetti
3. tacos
4. leftovers
5. tuna noodle casserole
6. leftovers
7. pizza
I know we would have enough leftovers for a couple of meals.

In addition to the ingredients for those meals I would make sure we had:
flour
salt
cereal/oatmeal
milk
eggs
cheese
crackers
popcorn
peanut butter
jelly
fruit
juice
bread
butter
cooking oil
yogurt
food for pets

That's about our standard weekly list anyway...
That sounds very similar to my list and I spend a fortune. I started using coupons which helps but it still amazes me how much the basics cost.
I would add Tofu, cereal for DH, soy milk and Bob's red mill Muesli for me.
