attempting to go Gluten Free AND Complex Carbohydrate Free?

I have to try to do this, but I feel very overwhelmed and daunted by it. Any advice? Anyone BTDT? Tips?

We are sort of. I'm gluten, dairy, soy free. DD2 is gluten, dairy, soy, beef, corn, and more free. DS is gluten, dairy, soy, chicken, turkey, rice, egg free... At one point DD2 was down to 20 foods but the pediatric GI doctor we saw said it was really balanced and healthy so it's do-able. I have a recipe blog and you can do a search by allergen to see if you can find some new recipes. We use alternative flours and I make pretty much everything from scratch. Over on the allergy forum (under Health & Healing) there's a Recipes sticky at the top of the page with recipe ideas too. And lots of support.
