I have 4-5 huge eggplants. I doubt we will eat them all before they go bad though! is it possible to freeze them somehow? I'm already making a double batch of eggplant parmesan, but that will only take 2. any ideas?
Also, I like it grilled lightly. Thanks, Mother Earth News! It makes so much sense! It is great in sandwiches and soups. Just marinade for a bit, and toss on the grill. Also, a tip, if you bread, my prof. chef friend says only Japanese bread crumbs, cause they don't get mushy.<br><br>
