Thsi recipe is from <i>Recipe's for Longer Life</i> by ann Wigmore. I have never made it.<br><br>
Raw Carrot Cake:<br><b>1</b><br>
1/2 cup soy flour<br>
1/2 cup sunflower seed meal<br>
1/2 cup bran<br>
1/2 cup steal cut rolled oats<br>
2 tsp. kelp<br>
1 tsp. cinnamon<br>
1 tsp. nutmeg<br><br><b>2</b><br>
8 Tbs. almond butter<br>
4 Tbs. raw honey<br>
3 Tbs. coconut oil<br>
3 Tbs. water<br>
1 tsp. vanilla extract<br><br><b>3</b><br>
1/2 cup soaked raisins<br>
1/2 cup soaked soft dates<br>
1/2 cup shredded coconut<br>
3 cups shredded carrots<br><br>
Mix column 1 together. In another bowl, mix together the 2nd group of ingred. Grind thru a food grinder the soaked raisins , dates and carrots (or chop extremely finely or blend thru a Champoin juicer).<br>
Mix dried fruit and carrots mixture with honey mixture (number 2); then mix in the dry ingred. Put thru food grinder a second time. This is important it gives it a lighter texture.If not using food grinder, mix ingred. very well with a spoon, adding spring water if needed.<br>
Form into a loaf pan that is well oiled with coconut oil. Refrigerate for several hours before unmolding. Garnish with coconut. Makes 1 large loaf cake.
