That's funny - just this morning I was wondering if I had missed the thread.

We are getting lots of apricots from our tree right now. I've been freezing them and making apricot/yogurt smoothies. This morning I made buckwheat pancakes with apricots and sunflower seeds. They came out really yummy.

Vegan mama here, but I ate the kids' leftover free bakery cookies they got at the grocery store-- probably they had eggs in them

Anyway, I've been going nuts lately making salad/ pilaf type dishes that have a base of a grain like couscous, quinoa or bulgur (all very easy to cook), with an olive oil/ lemon juice dressing, with any mixture of the following scattered in: beans, chopped greens, scallion, red peppers, caramelized oinion, raisins, cashews, herbs, crushed garlic... these dishes are so healthy, filling, satisfying, are vegan, and could be served as a side dish at an omni/ lact-ovo meal. Also they are eaten cold or at room temperature, which is nice during the hot months.

mmmmm...sign me up. I'm 3 weeks into the Eat to Live Vegan thing, trying it out. I'm trying to focus on veggie & fresh fruit dishes, less on grain.

I love carmelized onions SO MUCH! I made a great veggie dish yesterday, I used miso broth to steam up onions, garlic, shredded carrots, julienned zucchini, tomato, jalepeno, red peppers & black beans thrown in...it was yummy.

I did have some bread...I've been making garlic salsa bread. I own a mex restaurant, so just recently I started adding the salsa to my homemade bread before it rises. It's really good with cheese baked on top, too.

Anyway, I wanted to sign up & let every veg mom know she rocks for caring & being kind!

Itsybitsy, I was in the same boat & looked up a thread called wfd (what's for dinner). I got some extra firm tofu, crumbled it & browned it, added sloppy joe (organic)mix & a can of tomato paste...Did the sloppy joe thing with some baked potatos & asparagus for the fam.

I'm gonna try the roasted asparagus thing tomorrow

Hi mamas! Thanks for starting this thread! I can't get enough cherries and watermelon lately (I'm 5 mo. preg.)

Cathe~ I'm so jealous about your apricot tree, yum! We have several fruit trees, but I think all the late rain we got has confused them, so no fruit yet! I'm most excited about our pineapple guava tree, its only a few years old, but it has some blooms on it right now so maybe we'll get fruit this year!

I've been cooking quinoa a lot lately, its so easy, one grain I don't mess up and it only takes like 15 min.! The dogs like it too


Ok, I know its not really soup season, but this is such a yummy recipe, that I have to share it!

Vegan Chowder~
2 Tbsp. oil
1 medium onion
2 carrots
3 celery stalks
2 cups water
2 cups soymilk
1/2 lb. tofu, crumbled
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. celery seed
2 large potatoes, peeled and cubed (about 2 cups)

Chop the onion, carrots, and celery. Heat the oil in a large cooking pot. Add the onion, carrots and celery and sauté for 15 minutes.

Add the water and soymilk and stir. Add the tofu, salt, pepper, and celery seed and bring to a boil. Add the potatoes and let the chowder simmer until the potatoes are soft.

Makes 8 servings.

Note: I always add "Better then Bouillon", they sell it at health food markets, its like bouillon, but in a glass jar and more paste like, it adds a lot of flavor!! Without it, its just not the same!

I've also made several different versions of this, sometimes leave out the tofu and add broccoli, sometimes mushrooms...

Been trying to spend a little less time on the computer lately. Glad this thread got started, I always get great ideas.
mountain - I've been thinking of trying the eat to live, how's that going? Is is hard with the rest of the family?
I'm really looking forward to tomato season
Been eating berries like crazy.

I just finished stuffing my greedy face with 2 Garden burger Chickn Grill sandwiches on whole wheat organic buns with Vegenaise and lettuce. YUM!

I just got Vegetarian Times' new issue, although I don't usually buy it, because it has some really delicious dessert recipies and quite a bit of the recipes in it were vegan. I can't wait to make lemon ice cream sandwiches with gingerbread cookie "bread".

Hi everyone! I'm busy procrastinating as my in-laws will be here tomorrow (for 2 weeks!) and I have a ton of stuff to do ... and don't want to! We're vegan and have been gluten-free for a few months (vegan for a few years
), but dh and ds get to have a "gluten trial" while gma and auntie are here. I'm staying gf.
Here are my dinner ideas so far...

herbed split pea soup w/ salad
black bean soup w/ tortilla chips
loads of lentil soup w/ quinoa
snow pea stir-fry w/ brown rice
best of all veggie burgers w/ potato, veg, miso gravy
tasty taco salad w/ tortilla chips
tamale pie
shepherd's pie
asian broccoli noodles
salad w/ tempeh and chickpeas
chickpea salad sandwich spread w/ tortillas, bread, lettuce
tacos
beanie burritos w/ ww and bw tortillas
pizza
soybean burgers w/ potatoes, veg, salad
spaghetti w/ salad and maybe gf breadsticks
oriental tofu and broccoli w/ brown rice and cashews

Ok, I really must get busy! :LOL

mmmmmmmmmmmm I love this thread!

I just made this at a dinner party Saturday--it was a huge hit!

DRESSING: (can be made ahead of time and lasts forever)

1/2 cup veg. oil
1/4 cup white vinegar
1/3 cup sugar

TOPPING:

1/2 cup butter ( I used less)
1/2 cup slivered almonds
2 packages regular flavored Ichiban brand noodles with seasoning packets
1/2 sesame seeds

Brown almonds, sesame seeds and broken up noodles with butter--mix in
seasoning packs near the end.
You can do this the night before if you want and just keep it in a container on the counter.

SALAD:

1 or 2 green onions chopped up
2 heads of Suey Choi lettuce (Save On and Superstore )

That's all---just put the topping on and add the dressing and your all done.

We had quite the concoction from the depths of the food pantry for dinner tonight! Tofu stir-fried with broccoli and garlic in rice. The sauce was made from cashew butter, water, mirin, maple syrup, sesame oil, curry powda', and coriander. Sounds weird, but let me tell ya...
!!!

On the side was corn, onion & arame saute. My toddler inspired the big mixing of everything (Rainbow Gathering-esque), and that was really tastier than the seperate servings! :LOL

Last night I made lentil veggie burgers. About 1 cup of lentils cooked with a chopped onion and garlic, mixed with wilted greens, grated carrot, oatmeal, whole wheat flour, soy sauce, and pepper. I fried them up with peanut oil. They came out yummy but I think next time I'll put more garlic in.

I swear I'm not going to turn into a walking advertisement, but I really like it...I learned a lot from that book.

Fell into the trap of the lazy vegetarian...Hungry? Throw a veggie burger on, melt a bunch of cheese on it, whole wheat bun, fries. I couldn't figure out why I'm still holding on to the last 20 pregnancy pounds 3 years later!

I've been off dairy (except a bit of yogurt here & there
) for 4 weeks on Monday, and I feel really great. I miss cheese like hell,
: but physically I feel so energized with little to no grains too!

With my family, I'll still bake bread & buy organic dairy for my kids, but they consume a bit less now! MY SON grabbed a bowl of sprouts from the fridge, and munched away the other day! The difference for me is that I actually EAT all the veggies that used to ROT in my fridge after I'd buy 'em
So it's more prep in the kitchen for me, but it hasn't been overbearing so far.

Anyway, I made this great smoothie last night: ice, vanilla soymilk, pineapple, mango, strawberries, ground flax. So simple but SO yummy!

Thanks for the recipes everyone! I'm loving all the melons & berries too!

Hi all. Just came back from Yosemite, amazing every time.
Anyhow, I'm reading Fast Food Nation, and wow! I'm really intrigued as to how people can eat meat after knowing that kind of stuff. Anyhow, I was wondering if any of you all have any other suggestions for veg reading. I would love to read more (if I can stomach it).

chocolate cupcakes... w/ blackbeans?!?!

That is a recipe from the july/august edition of vegetarian times. We made them yesterday and they are VERY yummy! And 5gs of protein per cupcake!
mmmm cupcakes!

We've been on a pasta kick lately. Tonight I made linguini w/ fava beans and lemon cream sauce from Organic Times. Not vegan.... but very very yummy!

I'm vegan for 11 years now. Earlier this week I made a big ol' pot of sweet carrot soup and I've been eating it almost every day since. Its a sample recipe I got off the internet from the Babe: Pig in the City cookbook! Remember that movie? The pig had his own vegetarian cookbook! :LOL Let me know if you want me to post the recipe.

Kimberley, I just wanted to say I loooove your cat's name. That is too cute!

Isosmom - have you read Mad Cowboy? That one really convinced my dh. The Food Revolution by John Robbins is also good, also Eternal Treblinka. The DVD Peaceable Kingdom is really great.
