The grimacing is normal, I think. Yesterday ds grimaced a bit with every bite of sweet potato, but ate it all. He was grabbing the spoon and putting it in his mouth, so I certainly wasn't forcing it on him. I think it is just a response to a new texture.
I guess I'd say perhaps try the applesauce once more with no pressure. Then hold off for a few days. Things can change a lot in just a few days. There's nothing magical about six months, though. IMO, you could wait several more months with no concerns. Sounds like your ds would enjoy just playing with a spoon, too!
Oh, I wanted to add, ds prefers WARM food. So I pop the applesauce in the microwave for 10 seconds or so (and then stir it well and check to make sure it isn't too warm). If it is cold, he won't eat it.
