I never used to be a breakfast eater until I became pregnant. Now I can't imagine a day without it! However, I'm still learning how to cook this once mysterious meal. I'm a WOHM and don't have much time in the morning so I usually wait until I arrive at work to eat. My old standby, instant oatmeal and a yogurt, has lately lost it's luster.
One of my favorite new recipies I've tried is Kimber's Kickin' Oats from the Peggy's kitchen column. Just did a big shopping at Trader Joe's and I have made the recipe my own and, gracious, is it good! I make it the night before and it lasts me two or three days
Very adaptable and definitely easy and delicious. Reheats very well. Since there were some recent TJ's threads I thought I might share my recipe with specific TJ's products. It is the same as Kimber's but I'm wording it from memory. I hope this is OK to post and doesn't step on any toes
Here's my TJ's version of Kimber's Kickin' Oats:
2 C TJ's Dixie Peach Juice
1 C TJ's Country Choice Multigrain Hot Cereal (In a canister like oatmeal)
Handful chopped almonds
Handful dried fruit (I used the TJ's Apple, Peach, Cherry, Pluot blend)
Preheat oven to 350. Boil the juice in a saucepan and add the cereal. Stir and cook for a minute. Remove from heat and add nuts and fruit. Pour into buttered baking dish and cover (I use foil) and bake for 20-30 minutes until liquid is absorbed. If desired, top with brown sugar and butter and broil until bubbly (I have tried it both with and without this step and it's awesome either way). So good with TJ's Organic Vanilla Yogurt. Next I'm gonna try it with banana chips, walnuts, and apple juice.
