We have tomatoes, zucchini and corn in excess. Anyone have a great recipe or idea to make use of all three of these?<br><br>
Quiche? (Are the tomatoes too wet for this?)<br><br>
Soup?<br><br>

Quiche would be good, as long as you remove the pulpy, seedy bits from the tomatoes, and saute the zuchs first.<br><br>
Otherwise, there's <a href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_31993,00.html?rsrc=search" target="_blank">Minestrone.</a> Just throw corn in, as well.<br><br>
I have a great Corn Tortilla soup recipe that I could PM to you, if you like. It uses corn and roasted tomatoes, and you could just add some zuch.<br><br>
Or there's cheater's ratatouille: Cube (unpeeled) eggplant, zuch, red bell pepper, and sweet onion (feel free to add some corn <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/winky.gif" style="border:0px solid;" title="Wink"> ). Toss all in a roasting pan with minced fresh garlic, olive oil, kosher salt, a bit of fresh minced rosemary, and freshly ground pepper. Clear a corner of the pan, and fill it with roughly chopped tomatoes, drizzled w/oil, and sprinkled with salt and pepper. Roast at 425 until the veg have good color. Deglaze the super hot pan with a splash of white wine.<br><br>
Squish up the tomatoes, and stir to coat everything in them. Add some freshly torn basil, and grate on some parm.<br><br>
Serve as a side, or over pasta(with a pinch of lemon zest).<br><br>
