Ok this past weekend my in-laws were visiting and we cooked an 8 lb ham, thinking they were staying for a few days, so we would get a few meals out of it. They decided not to stay, so we have ham leftover.<br><br>
Any ideas what I can do with it other than just serve it with various sides?<br><br>
The only (and tough) requirements are no dairy, eggs or nuts in recipe because DS is anaphylactic to them. We can use rice milk and non-dairy margarine.<br><br>

scalloped potatoes with ham -- this crockpots and freezes well (at least, the dairy version does, but you may know better about how non-dairy subs freeze?), so you can make a big batch<br><br>
pastas, either cold as pasta salad or hot, with ham -- I'd try <a href="http://www.allrecipes.com" target="_blank">www.allrecipes.com</a> for ideas there, but what occurs to me is a mock-alfredo sauce with ham, mushrooms, peas.<br><br>
sandwiches or wraps? I'd say grilled ham and cheese, if you use cheese subs.<br><br>
you can also freeze ham just fine, and pull it out later when you're not so sick of it. <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"> HTH!

We had a lot of ham leftover from easter and the best leftover idea was Ham Fried Rice. We threw in a ton of veggies-broccoli, cauli, kale, carrots,& onions- and simply added some of the ham chopped up. Fried in some coconut oil with some tamari....YUM!!<br><br>
I really want some now!

These are some of my favorites when I have left over ham:<br><br>
Split pea soup with lots of chopped ham<br><br>
Blackeyed peas with ham, or hoppin john of you want to get more elaborate<br><br>
cooked greens like kale or collards with ham
