What can I whip up besides sandwiches? I'm planning on freezing some of it also.<br><br>
eta - I don't have any of the traditional sides leftover.

Then white chili if there is any left

Dh threw out the carcass and fat.<br><br>
Turkey noodle soup sounds great!

I like to do runzas with shredded turkey. There is a recipe for runzas in the <i>Whole Foods from the Whole World</i> cookbook by LLL, and it called for ground turkey instead of the traditional ground beef, I think. Or maybe that was just the substitution my friend used. But after we made them together in a Once A Month Cooking get together, I made them several times later on, using shredded turkey. They are so good that way!

Use one egg per every 3/4 cup flour and some salt.<br><br>
I usually do 1 1/2 cup flour 2 eggs 1 tsp salt<br><br>
They are a bit softer if you fill 1/2 of one of the egg shells with some milk (or sub I use rice milk) and add that.<br><br>
Mix them together into a ball. Let that rest for about twenty minutes<br><br>
Then separate the dough into four or five smaller balls and roll them out real flat. Use more flour for the counter and rolling pin.<br><br>
Let the big flat blobs rest for another 15 minutes or so.<br><br>
Slice up your noodles <img alt="" class="inlineimg" src="http://www.mothering.com/discussions/images/smilies/smile.gif" style="border:0px solid;" title="smile"><br><br>
The resting is super important. If you don't let your dough rest the noodles will turn to goo.

We are having turkey reubens for lunch. It's the only way my son will eat sauerkraut and we are trying to do more fermented foods. I also second the enchilada idea.

turkey lentil soup! i like to take it easy after a day full of cooking!<br>
brown garlic and onions, add lentils, liquid, and turkey. you can use chicken stock, or just water to make the lentils.<br>
I add diced potatoes and a bit of mint to mine.<br>
salt at the end if needed!

Crepes with left over turkey, broccoli and homemade cheese sauce!!! Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm... Then I put them into a pan and cover in some grated cheese and bake for a bit so everything's nice and hot and melty.<br><br>
OMG I want some now!

Great thread! I'm going to do turkey chili. Also made bone broth with the carcass and will make turkey noodle soup!

I threw the carcas in the crockpot this morning with cold water, carrots, celery, onions and spices. Its been simmering all day.

I always do turkey rice soup...that's what I *should* be doing instead of MDC'ing, actually.
