I have usually used Fantastic Foods boxed mix of Tofu Scrambler that you add to your own tofu. I liked it because it was really flavorful , even if I didn't have veggies to add. But I'm trying to cut out all the extra packaged food, so I need a tried and true recipe I could use!<br><br>

well mine is kinda in my head and i add things as i go but this is basically it:<br><br>
1 14.5 oz diced tomatoes drained<br>
24 oz of firm tofu<br>
2 bell peppers diced<br>
1/2 tsp + some hing (garlic/onion substitute, just replace with onion or garlic if you dont want to use this, it is available at indian grocery stores)<br>
1/4 tsp +some tumeric<br>
1/2 tsp +some paprika<br>
1 tsp +some salt<br>
1/4 tsp + some pepper<br>
2 tbsp or more fresh coriander leaves<br>
2 tbsp or more fresh parsely<br>
sprinkle of italian seasonings<br><br>
drain tofu. add some olive oil to your pan ad all spices except the fresh ones. cook till all the water is out then add the fresh herbs and cook 2 mins or so more...<br>
i some tiems add fak sausage to this and eat it with homemade whole wheat toast. hth!!

I just crumble up my tofu and mix in Nutritional yeast and braggs and a little onion or garlic.
