Hi-

We just started a wheat, dairy and corn-free diet. Is there a "fake" butter which doesn't contain corn or derivative of corn? My dd2 really wants mashed potatoes. I bought rice milk but need a butter sub.

Smart Balance Light might be OK. I know it is milk, soy and wheat free. (does have soy lecithin.) I'm not sure about the corn. I don't see any obvious corn ingredients, but there are some things that may be derivatives? You could call them and find out. It tastes good, no hydrogenated oil.

Could you post the ingredients to Smart Balance? I might be able to identify probable corn derivatives.

sdgirl--We're dealing with corn, soy and dairy and the only safe margarine we've found is Mother's Margarine--the Passover version only (the rest of the year it contains corn oil). It's generally sold only in the spring and even then it can be hard to find a store that carries it. So, when we find it, we stock up.

For mashed potatoes, we've used chicken broth and/or olive oil along with the water that the potatoes were boiled in. They're surprisingly good.

I can't think of the specific ingredient- vegetable something-usually corn based, mono and di something. sorry to be such a flake. i'm not at the store and only used butter and olive oil until yesterday.

I've used Chicken broth in mashed potatos instead of butter and milk for years. It was a weight watchers tip!!!

I've used Smart Balance Light when I was diary free nursing, not knowing Gluten was the actually issue...

I think the tastest mashed taters are with the chicken broth and Costco sells organic chicken broth!!!!

Yeah, I personally love garlic mashed potatoes made w/ fresh roasted garlic (or put the pressed garlic in when you steam your potatoes, won't work if you boil them), olive oil, and fresh herbs (rosemary is good in them, as is fresh oregano and/or basil.)

I only use the Smart Balance once in a while when I really want a buttery taste.

I haven't tried chicken broth. That sounds pretty good.
We don't eat potatoes very often.

I have to "heck yeah!" a lot of these PPs.

Roasted garlic is amazing-- that gives you the buttery mouth feel and a satin-smooth flavor

Olive oil on anything and everything. We even use it as the oil in cake baking. If you whip it, you can even spread it.

Chicken stock, especially homemade, is insanely delicious.
