Looking for a really great TF biscuit recipe

I have a bunch of rendered rooster fat from a few we culled and cooked over the weekend and would love to use it for some yummy, flakey, delish biscuit. Anyone have a recipe or method for me?

If you have Sandy Fallon's Nourishing Traditions, she has a Buttermilk Biscuit recipe on page 484.
thanks for the reminder, I'll try it again. I tried it once but didn't love it-- maybe it will be better with the chicken fat.
did you try a basic lard biscuit? sometimes I use buttermilk and throw in herbs as well
