Little electronic games like yatzee or something. My dd likes to just push the buttons, it doesn't matter what the game is to her.

We bought a bunch of inexpensive stretchy "sticky creatures" and just gave them out along the way on our last long car trip. You could do that with other small toys.

We also had a travel size magna doodle for dd.

What about small containers of playdoh?

I've never had a problem... but maybe we never used it while it was that hot in the car. Perhaps you can remember to take things like crayons and playdoh with you if you park the car for awhile.
I'm going to go put playdoh in the oven and see just how bad it gets!
