I just saw a thread in Nutrition about *real* mac 'n cheese, and now I'm craving it! Does anyone have any delicious veg*n recipes for it? I usually do soy/diary-free "cheese" but I occasionally do real cheese, minus the enzymes and rennet. So give me your recipes!<br><br>
Bonus points are given if you have a good soy cheese that actually melts!

In a saucepan, whisk together the dry ingredients. Add the soy milk and oil, and whisk until very smooth. Whisking constantly to avoid lumps, cook over low heat for 3-5 minutes or until the sauce has thickened. Flavor the sauce with a little sherry, if desired.<br><br>
Yield: 1 1/2 cups</td>

But personally, I prefer melting a few slices of Tofutti Cheese, Earth Balance and a few drops of soy milk in macaroni noodes; WAY more like the real thing.
